I recently had a hankerin' for something sweet.
My sweet tooth tends to be something that causes a quandary for me. I struggle with severe hypoglycemia and as I get older, even simple carbohydrates and fruit bother me. I really try to watch sugar intake and since I definitely try to stay clear of artificial sweeteners. When I use sugar, I use raw cane sugar. Stevia is my substitution of choice. For pancakes and waffles, I use Agave Nectar (sparingly). Needless to say, I don't buy box mixes anymore and searching through recipes can be frustrating. I miss convenient things such as jello and pudding. I have yet to try my own gelatin but pudding isn't really that hard. I posted this picture on Instagram and had someone ask for the recipe. |
In order to make homemade pudding, you need a saucepan and these ingredients:

- Cocoa
- Sugar or Stevia
- Eggs
- Vanilla

For one serving it would be about (I don't measure things.):
While that is heating (which seems to take forever), thoroughly beat:
Poor back into the saucepan and heat until about the desired thickness, then turn off heat and add:

For five of us, I think we used 5 or 6 cups of milk and 6 or 8 eggs with a cup of sugar and about a cup of cocoa. (Like I said, I don't measure.) I probably spilled the vanilla into it as usual.
The old Betty Crocker recipe I took this from originally called for cornstarch. I've done it both ways and just don't fell like it made that much difference. We have a few in our home who are allergic to corn, so I try to minimize it's use.
In my personal cup of pudding, I also omitted the sugar and added one package of stevia with the vanilla instead, as noted.
If your sweet-tooth is being extra pesky, the Paleo Danish Cookies would be very yummy with this pudding. (Great, now I'm hungry!)
